Homemade flaxseed bread in 2 minutes

This is by far the easiest and as close to real bread as it gets for me. Due to my IBS, wheat bothers me, so as some alternatives (soy flour, oat bread etc). Anything store-bought, including flaxseed bread and other so-called "fitness" type of breads still contain some kind of harmful ingredients (sugar, sweeteners etc).

I don't really miss real bread anymore, but occasionally I do make some protein flourless pancakes, so I thought to try the microwave bread method, which is faster than the pancakes.

Next time I will try the golden flaxseeds, and maybe even with whey powder to turn it into protein bread and see how it comes out. I will make a new post if it's worth making it.



This is for one serving.

Ingredients:

  • 4-5 tablespoons of ground flaxseed (brown or golden, whichever you prefer)
  • 1 teaspoon extra virgin olive oil (or butter if you prefer. I'm a Greek Cypriot, I love olive oil).
  • Half teaspoon baking powder
  • 1-2 tablespoons full-fat milk (for more fluffiness, optional).
  • 1 egg, beaten.
  • Salt or honey to taste (I'm not on the ketogenic diet and I do like my bread sweet, so I add a teaspoon of honey instead of salt. All optional. You can even add a tablespoon of nutritional yeast or chia seeds for extra nutrients if you'd like).

 Instructions:

  1. Mix all ingredients together until you make a really thick mixture.
  2. Pour the mixture evenly to whatever microwaveable container you have on hand (mug, bowl etc). 
  3. Bake it on your microwave oven for 1:30 - 3:00 minutes (the time will depend on your microwave oven, high heat is recommended. It took mine 2 minutes to be read).
  4. It's going to be really hot, so be careful when taken out of the container. I used a spoon to get it out from the bowl. You can use a spatula, knife or just turning the container upside down and tapping the bottom of it to get the bread out. 
  5. You should now have a fluffy, soft, warm bread that you can cut into slices. You can even toast it and spread some butter or jam on it.
  6. The golden flaxseed may be preferable if you enjoy white bread more. I'm ok with either.
