Ingredients
For the marinade
- Juice from 3 fresh organic lemons
- 1 tsp salt
- 3 tbs extra virgin olive oil
- 1-2 tbs oregano
- Half kilo chicken breasts, chopped into kebab-sized pieces
Tzatziki
- 475g (3x 125g boxes) organic natural (unsweetened) yogurt, greek yogurt, skyr, quark or other high protein yogurt
- 1 tbs dry mint powder
- 1 tsp garlic powder
- Half a cucumber, peeled and grated.
Other ingredients:
- Rolls / wraps - you can substitute for Greek pitta if available, or make your own, or even use a Mexican tortilla. I use a multigrain oat wrap.
- Salad (lettuce with coriander, arugula etc) - substitute with whatever veggies you like.
Instructions
Chicken souvlaki
- Mix the marinade ingredients and distribute evenly to the chicken pieces in a bowl.
- Preheat a pan and add the chicken. Cover with the lid in the beginning for a bit in medium heat to soften the chicken.
- After the chicken is almost ready and lemon juice is absorbed, remove the lid, and set the heat to high and sautée until brown. And they're done.
Tzatziki
- Mix all the ingredients in the yogurt and stir.
- Save the remaining in a food container in the fridge for another day.
Serve in a plate with a salad or as a wrap with pitta or tortilla bread.
