Cauliflower masala (and salmon)

 

Cauliflower

Ingredients

  • 1 large onion, finely chopped
  • 1 tsp salt
  • Half tsp turmeric
  • A third tsp chili powder
  • 1-2 tbs whole masala mix (if unavailable, replace with curry powder)
  • 1 tbs ginger garlic paste (or fresh, finely chopped garlic and ginger)
  • 4 ripe tomatoes, chopped (or 400g diced canned tomatoes)
  • 1 cauliflower, cut in florettes
  • 2 large potatoes, cut in cubes
  • 1-2 tbs extra virgin olive oil

 Instructions

  1. Saute the onions in olive oil and all the spices.
  2. Add the tomatoes, cook for 1-2 minutes.
  3. Add the potatoes and cook for 15 minutes in low-medium heat with the pot covered with a lid.
  4. Add the cauliflower and cook for 20-30 minutes more.
  5. Optional: sprinkle some fresh chopped parsley or coriander.
  6. Serve with yogurt or flatbread or as a side dish.

The salmon 

Ingredients

  • 2 salmon filets
  • Extra virgin olive oil 
  • 1 sliced lemon
  • Lemon juice from 2 lemons

Instructions

  1. Brush a deep baking tray with olive oil and lemon juice from 1 lemon.
  2. Add the salmon filets in the tray.
  3. Pour the rest of the lemon juice, some olive oil and top with the lemon slices.
  4. Cook in the oven at 215 degrees Celsius for 20-30 minutes.
