Greek Cypriot Fasolaki Yakhni (green beans in tomato sauce, with chicken)

 

Ingredients (makes 6-8 servings):

  • 1 vegetable or chicken stock cube with 1-2 cups water (or 1-2 cups chicken broth)
  • 1 cup extra virgin olive oil
  • 1 onion finely chopped
  • Lemon juice from one lemon
  • 3 carrots cut in cubes
  • 2 potatoes, peeled and cut in cubes
  • 1kg chicken, cut in cubes (I used boneless for the kids)
  • 3-4 ripe tomatoes or 400g canned diced tomatoes
  • 200g tomato pulp / juice
  • 300g green beans
  • Salt and pepper 
 

Instructions:

  1. In a bowl, stir in the chicken pieces, salt and pepper and lemon juice.
  2. In a pan, saute / fry in olive oil the chicken until brown. Set aside.
  3. In a saucepan, add water and boil with a chicken or vegetable stock cube.
  4. In a pot, add a tbs of olive oil and caramelize the onions.
  5. Add the tomatoes and tomato pulp and cook for a few minutes.
  6. Add the chicken and stir well.
  7. Add the green beans on top (don't stir), and cover the chicken with the stock water. Bring to a boil. 
  8. Turn the heat to low and cover with a lid and cook until the green beans are half cooked (6-7 minutes).
  9. Add the potatoes, carrots, salt and pepper and cover with the lid.
  10.  Cook until potatoes and carrots are ready (soft) and the sauce has thickened (around 30-35 minutes).
