Ingredients (makes 6-8 servings):
- 1 vegetable or chicken stock cube with 1-2 cups water (or 1-2 cups chicken broth)
- 1 cup extra virgin olive oil
- 1 onion finely chopped
- Lemon juice from one lemon
- 3 carrots cut in cubes
- 2 potatoes, peeled and cut in cubes
- 1kg chicken, cut in cubes (I used boneless for the kids)
- 3-4 ripe tomatoes or 400g canned diced tomatoes
- 200g tomato pulp / juice
- 300g green beans
- Salt and pepper
Instructions:
- In a bowl, stir in the chicken pieces, salt and pepper and lemon juice.
- In a pan, saute / fry in olive oil the chicken until brown. Set aside.
- In a saucepan, add water and boil with a chicken or vegetable stock cube.
- In a pot, add a tbs of olive oil and caramelize the onions.
- Add the tomatoes and tomato pulp and cook for a few minutes.
- Add the chicken and stir well.
- Add the green beans on top (don't stir), and cover the chicken with the stock water. Bring to a boil.
- Turn the heat to low and cover with a lid and cook until the green beans are half cooked (6-7 minutes).
- Add the potatoes, carrots, salt and pepper and cover with the lid.
- Cook until potatoes and carrots are ready (soft) and the sauce has thickened (around 30-35 minutes).
