High Protein Soy Pancakes that actually taste good

These ones taste so good, you don't even need a syrup to go with them. In fact, I don't. I eat them just like regular bread with my eggs. You can't even tell they're soy.

The ingredients are for one person, and yields 3 small pancakes (about 30g of protein). Adjust as needed. 

You can make them in a non-stick pan. I used our beloved Prozis Flippit Kit as it's easier.

Ingredients

  • 3-4 tbs soy flour
  • 1 tsp baking powder
  • 1 egg, beaten
  • Honey to taste (I add 2 tbs, adjust as you see fit)
  • 3 tbs full fat milk
  • Olive oil

Instructions

  1. In a bowl, mix the soy flour and baking powder.
  2. Add the egg to the mix and stir well.
  3. Add the honey and stir again.
  4. Add the milk last. Add a little at a time while stirring until the mix reaches the right consistency.
  5. In a preheated non-stick pan, brushed with olive oil, at low-medium heat, add 2 tbs of the mix for each pancake. 
  6. Flip it over to cook the other side.
