Oven roasted Tandoori chicken and lemon potatoes


 

One of my favorite dishes, high in protein and healthy carbs, and absolutely delicious, me and the family can never get enough of this!

Ingredients:

  • Salt
  • Extra virgin olive oil
  • 1kg small white potatoes, peeled and cut into cubes (to avoid long cooking times, cut in bite-size pieces)
  • 7-8 chicken legs
  • 3-4 tbs Tandoori masala spice mix
  • 1 tbs raw papaya powder (meat tenderizer powder)
  • 450g full fat yogurt (don't use non-fat yogurt)
  • Freshly squeezed lemon juice from 4-5 lemons

Instructions:

  1. In a large pot with salted boiled water, add the potatoes and cook for 15-30 minutes in high heat (time depends on the amount of potatoes and how small/big they were chopped).
  2. Drain the potatoes and leave them aside for a few minutes.
  3. Brush a baking tray with olive oil, lemon juice (1 lemon worth) and sprinkle a little salt.
  4. Add the potatoes to the tray and drizzle on top of the potatoes some more olive oil (1 cup's worth), lemon juice (2-3 lemons worth) and a little salt.
  5. Place in the oven (top rack) at 215 degrees Celsius.
  6. In a bowl, mix the papaya powder, a teaspoon of salt and the Tandoori masala.
  7. Add the juice of 1-2 lemons, 1-2 tbs of olive oil and the yogurt into the mix and stir well.
  8. Brush a baking tray with some of the Tandoori yogurt mix.
  9. Add the chicken legs in the tray and brush their top with the rest of the Tandoori yogurt mix.
  10. Add the chicken tray to the oven on the bottom rack. Switch the rack positions of potatoes and chicken half way or as needed.
  11. Cook for 2 to 2,5 hours at 215 degrees Celsius. Every 40 minutes, check and turn the meat (potatoes should be carefully turned once as well).
