Extremely low calorie, highly nutritious, and my daughter's favorite. Can be used as a side dish or a main meal.
Ingredients
- 1-2 tbs olive oil
- 1 tsp salt
- 2 tbs whole masala mix (or curry powder)
- Half tsp turmeric
- A quarter tsp chilli powder
- 1 tsp garam masala powder
- 1 tbs ginger-garlic paste (or finely chopped fresh ginger and garlic)
- 1-2 onions, finely chopped
- 4 chopped tomatoes (or 400g canned diced tomatoes)
- 4 large zucchinis /courgettes (1kg), peeled and chopped
Instructions:
- In a big pot, saute and caramelize the onions in olive oil, with the ginger & garlic, salt, chili powder, whole masala mix or curry powder, turmeric and garam masala.
- Add the tomatoes and saute for a few minutes more.
- Add the zucchini and stir/mix thoroughly.
- Set to low-medium heat, and cover the pot with the lid for a few minutes until the zucchini becomes a bit soft and starts changing color.
- Remove the lid and cook in high heat until most of the water evaporates.
- Serve with yogurt, flatbread / pitta or as a side dish.
