Simple Zucchini Curry


Extremely low calorie, highly nutritious, and my daughter's favorite. Can be used as a side dish or a main meal.


  • 1-2 tbs olive oil
  • 1 tsp salt
  • 2 tbs whole masala mix (or curry powder)
  • Half tsp turmeric
  • A quarter tsp chilli powder
  • 1 tsp garam masala powder
  • 1 tbs ginger-garlic paste (or finely chopped fresh ginger and garlic)
  • 1-2 onions, finely chopped
  • 4 chopped tomatoes (or 400g canned diced tomatoes)
  • 4 large zucchinis /courgettes (1kg), peeled and chopped


  1. In a big pot, saute and caramelize the onions in olive oil, with the ginger & garlic, salt, chili powder, whole masala mix or curry powder, turmeric and garam masala.
  2. Add the tomatoes and saute for a few minutes more.
  3. Add the zucchini and stir/mix thoroughly. 
  4. Set to low-medium heat, and cover the pot with the lid for a few minutes until the zucchini becomes a bit soft and starts changing color.
  5. Remove the lid and cook in high heat until most of the water evaporates. 
  6. Serve with yogurt, flatbread / pitta or as a side dish.
