Yellow Lentils Curry with Oven Baked Hake Fish

 

A high protein and highly nutritious meal that's super easy and fast to make. Prepare the fish first, and make the lentils while you wait for the fish to bake in the oven.

The fish

Ingredients:

  • 4 hake fish filets (400g)
  • 4-5 tbs olive oil
  • 1 lemon, cut into slices
  • Freshly squeezed lemon juice of one lemon
  • 1-2 tbs Thyme

 Instructions:

  1. Brush a baking tray with half of the olive oil, lemon juice and thyme.
  2. Add the fish filets in the baking tray, and brush them with the remaining olive oil, lemon juice and thyme.
  3. Add the lemon slices on top of the fish filets.
  4. Cook at 215 degrees Celsius for 20-30 minutes (depending on the size of the fish and your oven).

The lentils

Ingredients:

  • 1 cup yellow lentils (soaked for 2-3 hours or overnight for better digestion and faster cooking)
  • 1-2 tbs olive oil
  • 1 onion, minced
  • 3 cloves garlic, minced (or 1 tbs garlic paste)
  • 4-5 tbs fresh ginger, minced (or 1 tbs ginger paste)
  • 200g coconut milk or yogurt (preferably full fat)
  • 1 tsp salt
  • 2 tbs curry powder
  • A quarter of tsp cayenne powder or chili powder
  • Half tsp turmeric
  • 2-3 tbs honey
  • Freshly squeezed lemon juice from 1 lemon

 Instructions:

  1. Wash and drain the soaked yellow lentils. Add them in a pot of boiling water (don't add salt!) and boil only for 3-5 minutes (be careful not to overcook them).
  2. In a separate pot, add olive oil, onion, garlic and ginger, salt, curry, cayenne or chili and the turmeric and saute for a few minutes.
  3. Add the coconut milk and honey and stir for 2-3 minutes in low heat.
  4. Add the lentils and the lemon juice. Turn off the heat, stir and serve.
