A quick and easy Margherita pizza I make for the kids. The whole thing has less calories than 2 slices of Pizza Hut or Domino's pizza, is ready in 10 minutes, and costs a fraction of what you would normally pay from a fast food restaurant.
Ingredients:
- Base of your choice. It could be a homemade one you made from scratch (cook it first before adding ingredients) or it could be a store-bought one (check for and avoid added sugar). It could be whole wheat, keto, cauliflower base, flaxseed or soy base, multigrain, or even just a regular tortilla wrap.
- 1-2 tbs tomato pulp or sauce (again, without any added sugar, preferably 100% tomatoes)
- shredded mozzarella or a mozzarella ball cut into thin slices (about 100-200g depending on the size of your base)
- fresh basil leaves
- Italian seasoning
That's all the ingredients my kids want (margherita). You may add any other healthy toppings you like (precooked chicken, olives, fresh tomatoes etc).
Instructions:
- Brush the base with tomato pulp (don't overdo it).
- Spread the mozzarella on top.
- Add the rest of the ingredients if any,(except for the fresh basil), with the Italian seasoning last.
- Cook in the oven at 215C for 10-12 minutes until the cheese melts. If you don't have an oven you can also cook it on the stove, in a pan. Brush the pan with some extra virgin olive oil and cook at low-medium heat for about 10 minutes until the cheese melts.
- When it's ready, add a few fresh basil leaves.
