A synbiotic is a combination of prebiotics and probiotics. Prebiotics are the food of probiotics, and even though some argue that you only need one over the other, I disagree. My personal experience and countless research suggest that we need both for a diverse and healthy gut.
Honey is packed with digestive enzymes, but also has oligosaccharides that act as a food for lactobacili and bifidobacteria, which are the probiotics found in fermented dairy, so in combination with the kefir, you have them both working synergistically for a healthy microbiome and good digestion.
The reason I break my 20h or 30h fast with this drink, is because taking probiotic foods on an empty stomach will ensure the most amount of colony forming units make it to the large intestine, meaning the beneficial bacteria will go straight to the gut.
